The reviewers have had their say, and West Bay’s Vivo cafe and restaurant is Cayman’s first vegetarian restaurant to take the top slot on TripAdvisor.
Vivo’s owner Mickey Zama told Cayman 27 by putting a priority on local, seasonal, and sustainable ingredients, the kitchen can craft meat-free and even vegan masterpieces to please any palate.
He said the restaurant’s rapid success – the place hasn’t even been open for a year – shows the menu is hitting the right culinary notes for locals and tourists who stop in for a bite.
“I know it was challenging at the very beginning, because of course you need to build up a reputation, and you need to let people understand that even if it’s “just” vegetarian, that it can taste amazing,” said Mr. Zama.
Also on the menu at Vivo, locally-culled invasive lionfish.
Mr. Zama said lionfish is consistently a top choice for guests, who love both the taste, and the fact that consuming lionfish helps support biodiversity on our reefs.
